Anjarisi Pongal

Anjarisi pongal, a rice dish made using 5 varieties of rice, is a traditional pongal served in sumptuous Chettinad wedding feasts. They usually prepare anjarisi pongal or anjarisi payasam using black kavuni arisi, varagu arisi (kodo millet), rava (sooji), javvarisi (sago) and raw rice. But I tried using indigenous rice varieties well known for their nutritive values especially for low-GI property like white kavuni arisi, varagu arisi, moongil arisi (bamboo rice), mappillai samba arisi (red rice), and kaikuthal arisi (hand-pounded rice) for making delicious and nutritious pongal.

Earlier elders in our family were of the opinion that baking cakes is a painstakingly strenuous procedure, and hence nobody in my family dared to bake cakes at home. We usually devour the cakes bought from the renowned bakery in our locality. During Christmas we had opportunities to relish home baked cakes like dark brown fruit cake, pale yellow semolina cake, etc. shared by our friends & neighbors. Those days home-baked cakes were so special for people like us as it was rare to find such soft scrumptious old-fashioned Christmas cakes even in the city’s premier bakery. Later we all bought the oven and bake spongy cakes at home even with local flavors. Here I have baked an eggless fig upside down cake using whole wheat flour & foxtail millet flour.

Paruthi Paal

Paruthi paal is a cottonseed milk dessert popular in the villages near Madurai, my home town. People, esp. the villagers, prepare a nutritious dessert using cottonseed milk, a traditional vegan milk. As a part of my college education, I served as an NSS (National Service Scheme) volunteer. We used to camp in the surrounding villages during summer vacation to understand the living conditions of the people and also help them improve their standard of living. We were always greeted with a glass of delicious paruthi paal in almost every household in those villages. Normally they used to grind a large quantity of cottonseeds everyday and used as a fodder feed particularly to milking cows. Apparently cottonseed milk is beneficial to lactating mothers as well. Others consume this dessert during summer to keep them cool.

Millet Noodles

Millet noodles is a delicious gluten-free meal that can be prepared in a jiffy using instant ragi noodles. Finger millets (ragi) can be included into the children, women and also old people’s diet as they are rich in calcium and iron. Iron is fully absorbed by our body only in the presence of Vitamin C. So it is a good practice to add the ingredients rich in Vitamin C like tomatoes, bell peppers (kudamilagai), lemon juice, etc. into a recipe using ragi millets. Here I have used tomatoes & bell peppers into my ragi idiyappam, and we can also add a squeeze of lemon juice before serving.

Millet Payasam

Millets are tiny food grains (hence the name), so we can cook them quickly & easily. Though millets are tiny they are nutrients dense food grains. Hence they are increasingly popular among Indians nowadays particularly for the low glycaemic index. There are different millets like kodo millet, barnyard millets, little millets, pearl millets, etc. available in the market. You can refer to the table below for the nutrition data of commonly used food grains & millets. It is useful to compare their nutrients and choose the right one that meets our dietary requirements. Now I have prepared millet payasam using foxtail millets (thinai arisi) suitable for making payasam.

Millet Pongal

Millet pongal is a healthy hearty dish that can be served for breakfast. Since millets have low GI, millet pongal is slowly digested & absorbed and hence the slower rise of blood sugar levels. Millet pongal may be simply served with spicy coconut chutney unlike pongal made of rice, so we can prepare this breakfast in a jiffy. Besides we can also serve this pongal with sambar, or vegetable gothsu.

Millet Kichadi

Millet Kichadi is one of our favorites that I usually prepare for breakfast. I serve this nutritious kichadi particularly when my son preparing for his exams as it helps to keep him fresh & focused during his exam even though he had not slept well the previous night. Since all the ingredients in this kichadi are rich in micro-nutrients, it turns out to be a complete meal. Hence millet kichadi is the perfect breakfast for active children & busy professionals to keep them energetic all through the day.

Kambu koozh

Kambu koozh (millet porridge) is one of the best breakfasts that can be taken on a scorching sunny day during  summer as it keeps us cool & energetic all through the day. I found this site on millets very informative. We can prepare koozh (porridge) using millets by cooking the whole millets or millet powders, and serve it diluted by adding either milk or buttermilk.
