Jackfruit Panna Cotta

Panna Cotta is a creamy Italian dessert similar to custard generally prepared by cooking sweetened flavored cream, set with gelatin, and served with fruit coulis, caramel sauce, or chocolate sauce. Now I have prepared a vegan panna cotta by replacing cream with coconut milk, gelatin with agar agar, and prepared the fruit coulis using locally grown jackfruit bulbs.

It is so captivating to see snowy panna cotta dotted with vanilla bean wobbling on a plate fringed with delectable golden jackfruit coulis.

Traditionally agar agar is used in Japanese’s Kanten diet (a weight loss diet), they drink a cup of kanten (powdered agar mixed in hot water) before their meal as it aids in reduced in-take of food.

Panna cotta may be served in a plate or in glasses, now I have set the panna cotta in a small bowl and plated as below. Also I have set the panna cotta & jackfruit layer in glasses and served with chopped jackfruit & cherries.

Jackfruit Panna Cotta Recipe:

Ingredients:

 Panna Cotta:

  1. Thick creamy coconut milk – 100 ml  (½ cup)
  2. Thin coconut milk – 400 ml (2 cups)
  3. Sugar – ¼ cup
  4. China grass (agar agar) flakes – 1/8 cup (chopped & tightly packed)
  5. Vanilla pod – ½

Jackfruit layer & coulis:

  1. Seeded jackfruit – 8 bulbs (roughly chopped)
  2. Creamy coconut milk – 100 ml (½ cup)
  3. Thin coconut milk – 200 ml (1 cup)
  4. Golden caster sugar – ¼ cup
  5. China grass (agar agar) flakes – 1/8 cup (chopped & tightly packed)
  6. Cardamom – 1 No.

Garnishes:

  1. Chopped jackfruits
  2. Fresh cherries

Cooking Method:

I have used fresh home-made coconut milk and you can check the slides below for extracting coconut milk. (I used three-fourth meat of a whole coconut for both panna cotta & jackfruit layer.) Alternately you can use store-bought coconut milk also.

Panna Cotta:

  • Rinse agar agar & keep aside.
  • Strain thin coconut milk into a sauce pan and boil in low flame.
  • Add sugar & agar and stir continuously until dissolved.
  • Continue boiling in low flame until it starts bubbling.
  • Now strain into another pan to separate any solid agar particle.
  • Add thick coconut milk & scraped vanilla bean (as shown below) and mix well.
  • Let it sit for a minute and remove from heat.
  • Pour panna cotta mixture (at room temperature) into a greased bowl & four mousse cups.
  • Close them with a lid and refrigerate for 2-3 hours.

Jackfruit Coulis:

  • Pour thin coconut milk into a sauce pan & add chopped jackfruit.
  • Heat the pan in medium flame and cook them until soft.
  • Keep boiled coconut milk aside after removing jackfruit pieces.
  • Add cardamom with cooked jackfruit and puree it using blender.
  • Heat another pan in low flame and add jackfruit puree into it.
  • Add caster sugar and stir until dissolved.
  • Pour 2 tbsp of coulis into a bowl and keep aside for plating.
  • Leave remaining coulis in the same pan to prepare jackfruit layer.

Jackfruit layer:

  • Add rinsed agar into the coconut milk used for cooking jack fruit.
  • Boil in low flame and stir until dissolved.
  • Strain into the coulis pan and cook in low flame.
  • When it starts blooming add thick coconut milk.
  • Remove from flame after a minute.
  • Pour jackfruit mixture (at room temperature) over chilled panna cotta.
  • Close them with a lid and refrigerate until set.
  • Top with chopped jackfruit and fresh cherries and serve layered jackfruit panna cotta.

Plating:

  • When panna cotta is set, dip the bowl briefly in hot water as shown below.

  • Shake slightly to loosen and turn upside down onto a plate.
  • Pour coulis around inverted panna cotta.
  • Top with chopped jack fruit and fresh berries and serve chilled.

Tips:

  • I have added golden caster sugar for the yellow color, but you can try with jaggery also.
  • I prefer to use relatively less sugar in chilled desserts but you may add sugar according to your preference.
  • Scraping vanilla bean: Slit open the pod vertically using a sharp knife and scrape the bean using knife or spoon.
  • How to use agar agar: We need to chop the agar agar strips into small pieces before adding into liquid.
