Mushroom Pepper Fry

Mushroom pepper fry is a simple recipe with quite a few ingredients. So I prefer to prepare this dish than any other mushroom recipes as I can serve these stir fried mushrooms with rice or with roti. We can also stuff this inside dosa or between sandwiches. It goes well with sambar, rasam, or particularly with mor-kuzhambu for lunch.

Mushroom Pepper Fry recipe:

It is easy to prepare the mushrooms before cooking them. There is no need to peel them, remove the stem, etc. before chopping them. We can simply wash them under running water, and chop them immediately. Also we can cook them easily without adding any water. Now let’s prepare kaalan milagu fry:

Cooking time: 10 min.
Serves : 2

Ingredients:

  1. Mushrooms (kaalaan)- 200 g
  2. Coconut oil – 1 tsp
  3. Onion (periya vengayam) – 1 No
  4. Curry leaves (karivepilai) – 1 sprig
  5. Freshly crushed peppercorns (poditha milagu) – 1 tsp
  6. Salt – 1/4 tsp

How to prepare mushroom pepper fry:

  • Wash mushrooms under running water.
  • Chop mushrooms & onion and keep aside.
  • Heat a pan with oil, add curry leaves & onions and saute till onions turn translucent.
  • Add chopped mushrooms and saute till the water is evaporated.
  • Add salt, crushed pepper and mix them well.
  • Now mushroom pepper fry is ready to serve.

Cooking tips:

  • If we add the mushrooms into a bowl of water while cleaning them, they will absorb the water like a sponge. So we need to wash mushrooms quickly preferably under running water.
  • I prefer to use fresh mushrooms than canned mushrooms.
  • You can also add a teaspoon of turmeric powder as turmeric & pepper is a nourishing pair, so we can add turmeric powder to make this dish fortified and also for adding color to this dish.
