Savoury moong bean filling:

Ingredients:

Moong bean (whole green gram/pachai payaru)1 cup
Coconut oil1 tbsp
Cumin seeds1 tsp
Onion (finely chopped)1
Garlic (minced)2 pods
Ginger (minced)1″
Green chilly (finely chopped)1
Red chilli powder1 tsp
Turmeric powder1/2 tsp
Coriander leaves (finely chopped)as desired
Asafoetida (hing)1/4 tsp
Salt1 tsp

How to prepare moong paratha:

  • Heat a pan with oil in medium flame.
  • Add cumin seeds followed by chopped green chillies, minced ginger & garlic and saute for few seconds.
  • Then add finely chopped onion and saute until translucent.
  • Add red chilli powder & turmeric powder and saute in low flame.
  • Add mashed legumes & finely chopped coriander leaves and mix well.
  • Finally add asafoetida powder & salt and then mix well.
  • Remove the pan from heat.
  • Prepare paratha using this filling as shown below.
  • Serve hot puran poli & moong paratha for breakfast along with raita & garlic tomato chutney.

  4. This looks great! I had puran poli for the first time when I was in Maharashtra with my son in 2018 and loved them. When I got back to Toronto I found a place that served them as well and I was so glad to have found it. Of course now with the pandemic it has been closed.

    Maybe someday I will try making them – for now I still struggle making even a simple chapati that comes out right. Practice makes perfect, though!

  5. I love puran poli πŸ™‚ Here we make a slightly different version and it is called holige. One is with chana dal jaggery filling and the other coconut jaggery filling. But I have never made them at home πŸ™‚ Usually in weddings and other functions, holige is favoured. Thank you for the recipe:)
