Sweet corn soup

Actually, I am not a soup enthusiast as I remember taking soups when I fell sick during my childhood days. Besides, it is a hot & humid climate almost 75% of the days here, so I would like to take hot vegetable soup only during winter or monsoon. Nevertheless, I like the idea of serving simple yet wholesome soup & salad for dinner as it makes us feel absolutely satiated. Sweet corn soup with sprouted moong salad is one such hearty and healthy meal that can be prepared with little efforts.

I prefer to use gluten-free arrowroot starch rather than commonly used corn starch (corn flour) as a soup thickener for its health benefits particularly for ease of digestion. Hence this soup can be served even to babies, old people, or anyone with sensitive stomach. You can also check out my other nourishing soup recipes here. Sweet corn soup recipe:

Time taken: 20 min.

Yields: 1 Litre

Ingredients:

  1. Sweet corn cob – 1 No.
  2. Carrot (medium) – 2 Nos.
  3. Green beans – 5 Nos.
  4. Arrowroot starch – 1 tbsp
  5. Salt – ΒΌ tsp
  6. White pepper powder – as required
  7. Water or vegetable broth – 1 Ltr

How to prepare sweet corn soup:

  • Remove corn kernels from its cob.

Fresh corn kernels
  • Wash carrot and beans.
  • Chop beans into thin discs and carrot into tiny cubes.
  • Steam corn kernels, diced carrots and sliced beans for 5 min.
  • Grind steamed kernels coarsely in a mixer-grinder just for 5 seconds.

Preparing the veggies
  • Add steamed diced carrots, sliced green beans & crushed corn kernels into a sauce pan.
  • Pour water or vegetable broth into the pan and bring it to a boil.
  • Meanwhile dissolve arrowroot starch in little water and prepare a lumps-free solution.
  • When the water begins to boil, pour arrowroot solution into the soup and then bring it to a final boil.
  • Stir in pepper powder & salt and remove the pan from heat.
  • Pour hot soup into soup bowls and season with salt & pepper.
  • Serve with salad & soup sticks.

Recipe notes:

  • We can also add other finely chopped vegetables like spring onions, cauliflower, etc. into this recipe.
  • You may sautΓ© the veggies in butter for an appetising flavor.
  • I prefer to use fresh kernels over canned kernels.
  • You can adjust the quantity of arrowroot starch according to the desired consistency.

  2. Firstly, the use of arrowroot starch to replace corn flour is amazing. That is a healthy replacement. And when you said easy, this is super easy. Just enough for a good evening snack. Souper, Megala!

    1. Yes, I used it in place of corn starch for its health benefits also. When I use corn starch I feel guilty for adding unnecessary carbs, so I like to use arrow root powder for the feel good factor. πŸ™‚ Thanks so much.

  5. I, on the other hand, an a sound fiend! I could enjoy it every day and never get bored. In fact, sometimes I go into work with a hot mug of soup in hand, rather than a cup of coffee. Love the sound of this and will have to whip up a big batch soon.

    Whenever I make a vegetable soup, or chicken soup, I will add corn kernels if I have some corn on hand. They sweeten the soup beautifully, and add a wonderful texture as well.

    I usually use lotus root powder to thicken soup or stew dishes. Lotus root powder is good as a cup of hot desert too~
