It is the peak of festive season here, Diwali is in the air, young girls & boys are on a shopping spree buying clothes, accessories, electronic gadgets, fireworks, etc. to celebrate this Diwali grander than the previous years. Men are looking forward to spend this weekend with his near & dear. Women are toiling away in the kitchen to treat her family & guests with scrumptious goodies. We usually prepare coconut burfi a couple of days before Deepavali as it is made using fresh coconut meat that won’t stay fresh longer.
Saffron, one of the most expensive spices in the world, was used a few thousand years ago by Indian queens to decorate their forehead with motifs such as sun, moon, crescent moon, or star. It was ground into a paste along with ghee and used as kumkum, hence the name kumkum flower/ kunguma poo. This tradition of applying kumkum is still practiced by almost every Hindu woman even today. Nowadays we use turmeric powder instead of saffron for preparing kumkum powder, and we prepare a beverage, Saffron Latte, using saffron.
Generally truffles are made of nuts, dry fruits and dark chocolate that are rich sources of vitamins, minerals & anti-oxidants; dark chocolate is good for healthy heart & brain. So truffles are not only delicious but nutritious treats that can be ideally prepared to gift our loved ones on any special occasion. These chocolate coated truffles act like protein-rich energy balls and may be packed as a mid-morning snack for school-going children.
Nungu payasam (ice apple pudding) is a delightful dessert served in wedding feasts and also in star hotel restaurants for the people with impeccable taste. Ice apple pudding is a creamy dreamy dessert with enticing flavors of saffron, cardamom and palm fruits (nungu or ice apple) considered as a perfect finish to a sumptuous feast.
We prepare buttermilk by diluting curd (yoghurt), and we also prepare creamy lassi using curd made of full fat milk. Spiced buttermilk is a traditional south Indian drink usually served after taking an elaborate lunch meal to improve the digestion. Buttermilk with jeera powder or chaat masala is popular in other parts of India. Lassi is usually served chilled as a dessert in almost every part of India.
Hot sunny days always remind me the summer vacations spent during my childhood days indulging in ice pops (Popsicle) like paal-ice, semiya ice, javvarisi ice, thengai ice, pazha ice, panchamirtha ice, etc. Indian popsicles are so flavourful that we could find delicious chunks of native fruits like mango, grated coconut, chopped nuts, slimy tapioca pearls or smooth vermicelli while relishing chilled pops. Nowadays it is hard to find ice pops with Indian flavours, those milky ice pops are replaced by creamy ice cream, chocolate sticks, etc.
This is our family’s favorite chocolate cake for being dark, chocolaty, spongy, and most importantly guilt-free. I have used whole wheat flour instead of plain flour (maida), vegetable oil in place of butter, and also used home-made yogurt (curd). I have also used chocolate ganache for frosting and garnished with chopped pista & edible rose petals.
