Tapioca Pearls Payasam

Indians usually celebrate every new beginning by distributing sweet boondi laddu. We follow a tradition of serving sweet boondi to our guests to celebrate the arrival of a new born in our family.  I usually make a payasam during every festival and special occasions. On this New Year I follow the same tradition of serving tapioca pearls payasam garnished with sweet boondhi (chickpea flour pearls) to my family.

Health benefits of tapioca pearls (javvarisi):

Tapioca pearls act as energy boosters and are beneficial to the people who recover from sickness or the people who involve themselves in strenuous physical activities like sportsmen. This is the reason that North Indians include tapioca pearls (or sago) into their partial fasting diet to regain the energy. So we can serve this dessert to active children participating in sports. Since tapioca pearls are easily digestible, it can be served to babies & also to old people. They are also good sources of calcium & carbohydrates, so suitable for busily multi-tasking women also. Tapioca pearls payasam (javvarisi payasam):

Time Taken (excluding soaking time) : 30 min

Yields : 900 ml

  1. Tapioca pearls (javvarisi or sago) – ½ cup (100 g)
  2. Sugar – ¾ cup (150 g)
  3. Milk – 500 ml
  4. Cardamom (yelam)  – 2 Nos.
  5. Ghee – 1 tsp
  6. Cashew nuts (mundhiri) – 10 Nos.
  7. Sweet boondi for garnishing

How to prepare javvarisi payasam:

  • Soak tapioca pearls and leave aside for 3 hours.
  • Roast cashew nuts in ghee, powder cardamom seeds using mortar & pestle and keep them aside.

  • Transfer soaked pearls into a sauce pan.
  • Pour 500 ml of water into the pan and bring it to a boil in high flame.
  • When it starts boiling cook them in low flame until tender & transparent.
  • Remove from heat.
  • Pour warm milk when the pearls are warm.
  • Add sugar and stir until dissolved.
  • Then add cardamom powder & roasted cashew nuts.
  • Serve payasam warm or cold.

Recipe notes:

  • We can replace milk with other vegan milk like coconut milk, almond milk, soya milk, etc.
  • I cooked 100 gram of tapioca pearls in 500 ml water and also diluted it further by adding 500 ml milk to prevent the payasam getting thick & viscous at room temperature.
  • We need to keep both the cooked tapioca pearls & milk almost at the same temperature while mixing them else it will start curdling.
